UNDER THE TARP COOKING CLASSES
Here's a look at our first cooking classes at Grey Fox in 2008. A grand time was had by all and Jim's classes were enjoyed by dozens of people each day.
JIM TARANTINO, a confirmed serial griller, cookbook author and five-string banjo player living in Philadelphia, showed Grey Fox fans how to take their camp cooking into a whole new realm of deliciousness. Two free one-hour classes featured recipes from his 354-page cookbook, Marinades, Rubs, Brines, Cures & Glazes (Ten Speed Press, 2006).
A list of ingredients needed for each demonstrated recipe can be found on our website. Some folks brought the ingredients with them and started cooking gourmet meals on the spot.
A third workshop, "Stocking the Bluegrass Bus" was aimed at musicians and others who need to eat healthy, tasty and easy-to-prep foods while on the road.
Jim Tarantino learned to cook in his teens by working in his uncle's restaurants. He has appeared several times at Philadelphia's Book and the Cook and has written numerous magazine and newspaper articles on marinades and grilling. He will be available for book signing at his booth in the vendor area throughout the weekend.
Here are the mouthwatering dishes Jim demonstrated in 2008:
Smoked Tropical Chicken Salad with Tropical Slaw
Grilled Pork Tenderloin with Cocoa-Chili Rub with Coconut Corn Salsa
Grilled Portobello Burgers with Gorgonzola
Yu-um!
